My Favorite Wholesome & Vegan Pancake Recipe!

These oat based pancakes make for a great breakfast or brunch! Unlike conventional pancakes, these are full of wholesome ingredients that will keep you full for hours. These are also considerably more affordable than mixes that you can find at health food stores! These yield around 4-6 medium sized pancakes, but you can adjust the recipe to fit how many you would like to make!
Here is the recipe!
You will need...
Rolled Oats (preferably organic & gf, but anything will work!)
Baking Soda
Chia Seed
Almond Milk
Liquid sweetener of choice (maple syrup, date syrup, honey, etc)
Almond Butter (any nut butter will work... I suggest sunflower seed butter for a nut free alternative!)
Sea Salt
Cinnamon

Steps:
Blend 2 cups of rolled oats in a high speed blender until they have grounded into a fine flour
Add the oat flour into a bowl with 1 tablespoon of baking soda, a couple pinches of salt and a teaspoon of cinnamon.
Add 1/2-3/4 cup of almond milk- enough that the batter isn't thick, but not too much so that it is too runny
Add 1/4-1/2 cup of liquid sweetener- this depends on how sweet you would like them! Again, the milk & sweetener ratio will differ for each person. The goal is to achieve a batter that is a similar texture to a box pancake mix!
Add 1 1/2 tablespoons of almond butter & chia seeds to the mix
Cook on a non stick pan & flip on each side when bubbles form.
Plate & Enjoy!
